I've seen a way to use PHP to detect a client's browser, but I was wondering if anyone had any ideas about how to detect a client's screen resolution using PHP?

Nope.. not possible. PHP is server-side. You need to use a client-side script... such as javascript.

I would have thought that as well, about the server v. client side-ness of PHP. But, I found a Browser Sniffer using PHP.

It uses the HTTP_USER_AGENT variable. I didn't know if there was another global variable like this that can be utilized for detecting screen res.
