Adding to a custom date

Hello,

I have a date: January 1, 2001 which is a Monday. How would I go abouts, for example, looping for the next 2 months, and getting every Monday to be displayed with the actual date. For example, January 8, 15, 22, 29....
Any help would be appreciated.
