Better way to save variables?

When using sessions, you can register a variable but it seems that you can override that variable by specifying it with the url http://www.foo.org/bleh.php?var=value. Is there any way other than using cookies that you can can keep the state of vars (tracking) throughout a session but have the client unable to change or modify them?

What my solution for this was to refer to the session variable using the syntax $GLOBALS["varname"] . I can even write within the page $varname= "iamahacker"; but the 'global' or 'session' value of varname does not change... I hope this helps
