How can I get users to send mails, which do not only include "plain" text. They should be able to select a font, color and certain characters, like bold.

You need to use html. The fourth argument for mail() is extra headers to send, simply add the header "Content-type: text/html" and then use html formatting in your produced email. Hope that helps.
