processing form input text

I am sure this question has already been answered a 100 times but I can't find the answer. When I am parsing a form in PHP when I print out the text area data by just echoing or printing it will print with all of the quotes changed to \".

How can I get my text to print with the original formatting. Spaces, new lines, quotes, etc.

Also is there any slick way to take a url like www.slashdot.org and automatically convert it to a hyperlink?

In my form I have:
<textarea rows="30" name="text_minutes" cols="75">

And in the parsing script I have tried:
$text_minutes = strip_tags($text_minutes);
echo "$text_minutes";

and
$trans = get_html_translation_table (HTML_ENTITIES);
$trans = array_flip ($trans);
$data = strtr($text_minutes,$trans);
echo $data;

and
$text_minutes = htmlentities($text_minutes);
echo "$text_minutes";

WHAT AM I MISSING?

Use stripslashes to remove the escape .

Use nl2br to recognise the line breaks.
