If the meta refresh is set to a certain time will the page be refreshed even if it is minimised? If I need to refresh a page every 5 minutes and some remote executions to gather latest data will be involved is meta - refresh the way to go or are there better approaches?

It's about the only way to do it.
If you want to see if it works even if the browser is minimised, the best method to find out would be to try it.
