Problems with data from SQL queries

Ok...I've been banging my head on this trying to figure it out on my own but I give up....it's probably something really easy though.

Ok...I have entered data through a form to a MySQL database and the data has 's in it (i.e ..don't won't yada yada). If I view the database with myphpadmin...it's all there fine. In my coding on my page I have URL's generated from the data in the database, and they show up fine, but if I query the information to make it editable, and place the results into a text field the data stops at the slash (i.e should show Don't you know?..but all I get back is Don).

Also I am having problems generating results with queries to the database when using % in the search string. If I do this:
SELECT * FROM database WHERE data LIKE '%$variable%'
sometimes it won't match anything, and sometimes it will only bring back one result, even though more matched!😕

I have done the same queries in myphpadmin and they work fine. My first thought was the stripslashes and addslashes but it doesn't seem right to me. My server is set up with magic_quotes_gpc On and magic_quotes_runtime Off (I tried turning that on but all the results now stop at )

Any help here? I've been trying to figure it out for a day and a half now. Thanks!

Same thing has been happening to me, and for some reason, my head won't quite get into the right gear to fully understand it.

Form -> Temp Table -> Live Table -> Temp Table -> Form

If someone can unravel the mess that's inside my head with regard to the above path, and ensuring that I keep things as secure as possible, I would be appreciative to say the least.

Don't want code, just want to understand the effect over time through the various states. I've read pages and pages, from alot (ALOT) of sources, yet still can't find sausage on the above path.
