uninstalling Apache (x2!) from win2000

After installing the foxserve package (apache, mysql ,php etc) in win 2000 pro I had problems with phpMyAdmin installing databases and then denying they existed. I then discovered that I somehow had 2 instances of apache running (I am not sure how it happened) but presume that's the problem.
Anyway it's obviously daft to have two apaches running at once!
However I seem unable to uninstall either version. Turning one off using the foxserve utility does turn them both off (not displayed in task manager) but turning on again starts up two.
So, I'm really in a muddle! I cant uninstall from add/delete programs and I'm not too conversant with 2000 as yet. So, can anyone give me an idiots guide to how I can uninstall one or both of these apaches and start again??

There should be 2 instances running in windows. I would suggest that you unistall everything that that all in one program put on and install them separately (Apache, MySQL, php from zip not exe install version). Those all in one things are really a mess as is the exe install version of php and each of those programs are so easy to install and configure individually. A general rule is that the more middle men you have the bigger the mess.

ah! there should be two??
the trouble is, I cant seem now to get rid of all this mess as you so accurately describe it..
this is driving me nuts.
I set out with the good intention of setting up my own server to run php/mysql to speed up development on my own pc (its slow uploading to my isp just to develop a site) and end up wasting a whole day (so far) just trying to get it to work...grr
