editing only a part of a file

is there away of just editing say just one line of a file? or do you have to make a new one eg.

i have a file view.php with the 11th line being "$path = "/Users/nick/Sites/sites/News";"

I want to be able to change this anytime i want as i want to be able to include it from directorys other than "News" but its a news script and the path is always different from server to server. so i want to be able to change it when the path is different. any ideas?
