How would I record the IP address of the user currently looking at my page and save it in a variable?

If your server has globals enabled, all you need is:

$user_ip = $REMOTE_ADDR;

...though enabling register_globals is a Bad Thing.

It's also available in $_SERVER['REMOTE_ADDR'], along with a pile of other useful bits and bobs.

Note of course that if the user is hitting your site via a proxy this will be the IP of the proxy server, so it's an unreliable way of identifying individual users.
