more of an html question, but you're thinking of a textarea.

<textarea rows="6" cols="40" name="email">Stuff you want inside textarea goes here</textarea>

Modifying the rows and cols values will adjust the size of the textarea. If you want to use this with php, just put it into an echo statement and escape the quotes.
