Does anyone know if it is possible to automatically verify a link, by checking the headers that are returned? I want to be able to check periodically that the links within a site have not become 'dead'

Use fopen() to attempt to open that URL. If fopen returns false, then the page is invalid. Otherwise, it's ok.
