variable syntax for select option drop down list?

I am working on an email form and need to know how to setup the variable for a selection in a dropdown list. In this case the list is "country" where the sender is from. In other words what do I assign the variable to?

<option value="UK">UK</option>
<option value="Germany">Germany</option>
</select>

this will create either

$country

or

$_POST['country']

or

$_GET['country']

depending on if you are posting/getting and if register_globals is off or on
