There's a setting in the php.ini file to specify the hostname or ip address of the mail server you wish to use. It's under the heading [Mail Function] and says "for Win32 only". The default setting is localhost, which obviously will work when the web server and mail server are the same machine... I'm assuming this isn't the case for you. Just change localhost to the ip or hostname of the machine running your exchange server.
