Flat Files

Most of my sites run on php and mysql, and though I should probably "stick with what works", I'm intersting in learning how to use PHP with flat or text files as the data source. Not necessarily because MySQL sucks, but just because...because! I just want to learn how. Unfortunately, I can't find any good online tutorials that cover this subject in great detail. Anyone know of any?
