The variable email is the destination email address, $subject is the subject of the email, $message is a string variable containing the body of the email...where it says "From...blah blah" is what it will say as who its from. Since this method of sending email is using a function to do it, that part doesnt matter because you cant reply to it...
There is another function where you can actually have php send mail via your SMTP server where the user could reply but for what you are trying to do this should work
