"on" results from form checkboxes

Hi:
I have a web form that customers can request additional information about products using checkboxes. It arrives in email like this:

Economy Closet: on
Wall Hung Closet:
Custom Closet: on

Any way to change "on" to some other word?
Any way to not even see the products they're not interested in?

you want to look at how you process the form & the values of the checkbox I'd say. without seeing your code it's not easy to say a lot more.
