register_globals

Lets say register_globals is off and I've posted form vars to
$email = $_POST["email"];

Can I now call on $email anywhere on any page and it will still hold the value of when I created it with $_POST["email"];???

Ahh...How about if register_globals are off and I post vars to:
session_start();
$SESSION["email"] = $POST["email"];
$email = $_SESSION["email"];

Could I now call on $email on any php page by calling on session_start(); first
even if register_globals is off?

or you could just use $_SESSION["email"] but thats up to you 😉

Same as for $email = $POST['email']; ... $email is just an ordinary variable. session_start() fills in only the $SESSION[] array.
