How to get rid of " \' " in a $_POST?

Hi, I've created an HTML form to collect user information, including text fields. When user put in text like the surname O'Neill, or anything with an apostrophe, the output of the text display on the next page becomes O\'Neill. If you go back to change other fields in the form, it then becomes O\\'Neill.

I know it's something to do with escape character, but I don't know how to get rid of it. I've tried the html_entities function but doesn't seem the way to go. Can someone help?
