I've got a form which when submitted I'd like it to still do what it's doing 😉 BUT also send an email to me saying that the specific form has been submitted!???

Use the mail() function.
where would I insert that in terms of my form?
It should go on the same page as where you process your form data.
The mail() won't have any effect on any other part of the page.
