$_ calls ? ($_post $_get ect...)

Ive done some scripts, but the host im moving over to later this year wont have register globals on. Ive looked into this and it seems i have to use $POST['variable'] to call the variable if its been sent via the POST method.
My question is, where can i find info on the $* range - so far ive seen $POST, $GET, $COOKIE, $SERVER.

Where do these come from ?, i can only find them in php.net when used in examples on the site 🙁

Another one which has me confused : i saw "$SERVER['REMOTE_ADDR']" on php.net. So again, where did $SERVER come from, and where has 'REMOTE_ADDR' been defined ?

If you've already found php.net, I don't really see what your problem is. They're all there, quite clearly marked. They're predefined variables, if you're still having trouble (though if you'd already found $GET, $POST et al. there you'd know that already).
