simple PDF search and replace

I used to do simple search and replaces inside PDF files to generate custom documents. With the Acrobat 6, I'm having trouble generating non-encoded documents.
Does anyone know how to get ASCII-encoding in Acrobat 6?
Or is there a better method to generate customized, well-formatted documents? SVG?
