user input

I am preparing a project where I will depend alot on user input for some of the content on it. I want some opinions on the best ways to handle user input.

I have a basic understanding of htmlentities and strip slashes and such. I am just reaching out to some of the more experienced guys are here to share some of the things that I may be missing.
