How to talk to Sage accounts

Hi,

I'm scoping a project whereby prices and possibly stock levels are concurrent with the companies Sage accounts package.

How does PHP interact with Sage to get the relevent data - does it use an SQL type language? Also how do I negate the risks of having THE accounts machine involved in realtime communications with the webserver?
