how important is it to remove all header and body code from included files. I always do, but as I usually build the files in Dreamweaver, it's a pain to do so...
Well, if you do not remove them, you get invalid HTML pages, which may be refused by browsers which take care of standards. I'd say it is pretty important?
That is assuming you mean the <body..></body> etc tags..
