I have Delphi application connected to mySQL server by dialup connection and I want to known the username & password sent to mySQL server from that application, any idea?

no - and i honestly hope noone else does either. passwords are being hidden from unauthorized users for a reason.

If it's for educational purposes then why are you working with a dial-up? You your university's high speed connection.
why are you so sure they connect directly to mysql??? maybe they use some sort of RPC ...
as for the other part, if you want to test/improve your hacker skills this forum is not the place to start
