HELP !!!!!! PHP (swedish letters)

I have a big problem, and I hope you can help me to resolve it.
I have done a mail form in flash, and I have a PHP code that support it, it works fine but the problem is:

when somebody write to me in swedish and use (Ä; Å; Ö😉 those letters cannot be read.

How do I fix it.

Probably need to use unicode/UTF-8. The trick is everything that works with the text, from the form, your PHP script, your email client, and the email servers - they all need to be able to handle the encoding.
