Backwards date conversion...

Ok, my PHP book tells me how to use time() to output a nice date format like "12 Feb 2004". But i need to know how to do this backwards... I want day/month/year dropdown menus in a form, which i can then work out a timestamp from. Anyone have any ideas? i hope im being clear.
