I still use PMA to create tables although I'm relying on my own company product, RelateBase.com, to do it more and more (a shameless plug I know.
However, the table creation interface would IMO be better if hitting tab took you down the columns vertically, vs. accross. You can hit control-down arrow, but hitting tab is easier. I made a small mod to allow this.
Additionally, I often use field prefixes for a specific table, eg, the table addresses would have addr_firstname, addr_lastname, addr_email, etc.. With my mod, a new field appears along with Table Name and Number of fields called Prefix (optional).

To try, back up the current version of those files, remove the .txt extension and save instead as .php files, and let me know if it's helpful.
