Is there a way (using php) that I can make an item add to a shopping cart, without any user being logged in. I figured there is probably a way to do it with sessions or cookies, but I am not sure exactly how.

yeah sure thats possible - do some reading on cookies - there are good tutorials out on this issue as well as plenty of shopping cart scripts - i am sure a few of them do what you want to accomplish already and you could examine how thise work - start at www.hotscripts.com
