Plain text mail will use what the e-mail client supports, I believe. Different operating systems and different e-mail clients have their own preferences. If you wish to have more control, consider MIME type and use CSS to suggest the preferential font type. However, if an e-mail client is set to only accept plain text, there is nothing you can do about that. The PHP manual has examples for HTML mail if you visit the mail function pages.
