What is your opinion on Fedora Core 3? Is it stable and secure enough to use for a server? Would I be better by using core 1 or 2?

Fedora Core is all developmental. I wouldn't recommend using any of them for a production server enviroment.
Redhat Enterprise Edition if you want a similar feel as Fedora but more stable and robust.
Is Redhat 9.0 good? I dont have the money for enterprise edition.
Or look into SuSE for a RedHat-esque OS. Or Mandrake...or if you're a bit more adventurous, my personal favorite Debian. (Hint, if you go with debian, install the "testing" distro, not "stable")

Eh....on a production server? Don't know about you, but I only install stable releases on a production server. The unstable debian is way too bleeding edge in the right.
Notice I didn't say "unstable". Testing is poised to be released "any day now". And from my experiences I've had fewer problems using testing, than "stable". As "stable" is so incredibly outdated that it's hard to get a lot of things running without dipping into "testing". In fact last I heard, a lot of the hold-ups on getting sarge released as stable were in the desktop arena, not the server. But take that with a grain of salt, as around here (sadly) all our production boxes run Redhat Enterprise 3.0.
