Collate Converting Languages Why?

Does anyone know why PHPmyAdmin is doing this:

SQL-query:
SELECT plan
FROM houseplans
WHERE plan LIKE CONVERT( _utf8 'B-750'
USING latin1 )
COLLATE latin1_swedish_ci
LIMIT 0 , 30

it's converting crap.... why does it convert crap?
I never told it to use COLLATE latin1_swedish_ci... and is there a way to stop this from happening anymore!

You may not have told it to do that but someone has in the server settings or elsewhere. Have a read of this and have a look at your server settings.
