preg_replace? or something

i would like to make a small script, that opens a file using fopen... finds selected text at the start and end, and in the middle make it a $variable.

Example...

In shop.php

I bought 9 items today

In Script

$Find1 = "I bought 9 ";
$Find2 = " today";

$WantedBit = "items";

Be to honest i dont have a clue about how i would go about this but any help i would be really greatful.
