How to use UTF-8 Encoding in MySQL?

Hi,
I want to add the following languages in my web site:

Arabic
English
China
Urdu

I want to use UTF-8 Encoding because it very easy and very good.
How to use it in tables? And what the right collaction for UTF-8:
utf8_general_ci
utf8_bin
etc...

and how to show it in PHP page withour errors?
