Selecting item in dropdown menu

Im having problems trying to select a specific option in the drop down menu which has been populated with a list pulled from the 'category' table in the db.

The option that needs to be selected is pulled from an id in a 'item' table, relating to the aformentioned category table.

Any pointers or links to tutorials gratefully received.

I usually do something like this:
