forms make things safe

I am building a simple php page that has a backend page that administers the front page so there is a form to upload information. As well as test, it uploads files.

Can someone give me some advice as to the checks i need to do when i recieve these posts...like addslashed() etc, do i need to check for register_globals??

Im just unsure as to what i need to do to make it safe, i dont want information to be lost.
