What would you guys suggest as the best method to build a simple email 'contact us' page that doesn't get abused by spammers? Do you guys use captcha?

Depends how big your site is, for me (a personal homepage) a simple image saying "What is 5+2?" suffice. It isn't even a randomly generated image, just a png i made in photoshop. This will stop 90% of all bots

I had a huge problem with spam, so I was forced to use contact forms on my site. I am using http://www.123contactform.com, they host my form and I receive an email each time someone fills it. They have a captcha image to avoid spam.

Yes, they have to answer it right or they're redirected back with the form filled out as they did it.
I also receive an email when they use the form
