Mail From: Header

I have multiple people sending emails through a system. How do I take that persons information and replace

$headers .= 'From: [e-mail]';

with

$variable = $row_userinfo['email'];
$headers .= 'From: $variable';

Pretty much as you have already got it listed although it might be easier to do the following:

$headers .= "From: " . $row_userinfo['email'];
