I was wondering if it were possible to change the default view in phpMyAdmin so that when I click on a table it defaults to the "browse" tab instead of "structure".

I'm sure it's possible, since it's written in PHP. However, I'm not curious enough at this point to figure out how. 😉
FWIW: in the version i'm using (2.11.2.1) you can click on the icon next to a table name in the left frame to browse that table.
