Should I count all page views or add a row with unique IP address on every view?
The 2nd method would add LOTS of rows which seems unnecessary really..

could just add google analytics to the page\site, let them do it for you. If your running on Apache there's some great log analysers that will also provide the stats for you.

It all depends on the reporting you want. If you only care about general statistics, general logging is fine. Otherwise you'll want to log about everything the user does ... or use Google Analytics as suggested above.
