htmlentities converting copyright symbol strangely on one server, not on another

I'm using htmlentities as part of a function that converts bad characters to ok entities. No problems on my dev server or any of my accounts at Pair Networks, but on another server it's converting the copyright symbol (circle-c) to something that looks like a capital A with a circle on top, plus a copyright symbol. I tried forcing the defaults - ENT_COMPAT, ISO-8859-1, double_encode to false - and it still does it.

Any idea what could be different between the two servers?

Sounds like a character encoding issue, e.g. the text where the copyright symbol is coming from was encoded using a Unicode charset, whereas you're trying to treat it as ISO-8859-1.
