Creating a FLV to MP3 converter..

I know there are sites that do this like youtube-mp3 and stuff like that but I was wondering is there any tutorials on how to do this? WHere would I start? I am also not sure if php even does this would I have run another app on some server or something, idk any advice you could spare would be awesome :-)
