Hmm, I'm not exactly sure how to turn on error checking.
After pulling my hair out all day I did notice one thing, caching was acting strange on my blog.
I couldn't simply disable my super cache because of some error (likely the same problem that was asking for my FTP info to install new plugins), but I manually removed super cache and this problem was gone.
However... every page but my index page was 404'd, and like I said above, I couldn't install plugins. I changed the permalink structure to default then back to custom, and all appeared well with that ONE domain, but now the other domains aren't even loading.
I am on the verge of insanity so I put my DNS back to my VPS box and I may just end up scrapping the server unless I am missing a very easy permission fix with my server. The way I couldn't even access Super Cache until I manually changed it to 777, then couldn't deactivate it, combined with my weird 404 errors + FTP / plugin thing leads me to believe something is up with the settings on my server. Perhaps 'too' locked down or something.
