best way of sync shop sales

Hi, I have to develop an app that admin all the sales part for a business, they have 7 shops over the country, so everyday I need to sync the sales from every shop, I will use LAMP, so my qyestion is:

is a good approach that every shop has it own server, then at night the server syncs with the main server, send their info and then get some statitics? or

use one single super server and all shops are working online all day to the server?

both options are valid, it depends on a rather large set of variables. for a start what e-commerce platform are they all running?
