As far as the original "web site a day" concept, it's a somewhat artificial limitation, as it limits the size/extant of any of those web "sites". Amazon.com is a web site, and no one person is going to build that in a day, or week, or month, or.... A simple static site with a couple static pages and a "contact me" page -- maybe you could whip that up in a day, but what does that prove?
Perhaps more interesting would be to build one web site in 6 months, and document the features that are added, the changes that are made, the dead-ends that are backed out of, etc., on the way to a full-featured, multi-functioned web site. 🙂
