newbie & escaping html in variables

i know i have to escape some of these, but i don't remember where i read how to do it.
and do you place the backslash before or after the quote marks?

can someone show me the right way?

$display = "<p class="subhead"><b><a href="$email">$name</a>'s $model</b><br>$engtran</p><p>Current modifications:<br>$modcur</p><p>Future modifications:<br>$modfut</p>\n";
