One Form - Multiple Pages

So that I may search this forum,
What is the technical term for capturing information that would normally be on one form but instead capturing this information over several pages so as not to overwhelm the customer?

e.g.
Name and e-mail on one page
then click to continue
then next page address phone#, etc
over 4 to five clicks then a submit button on the final page.

not sure there is a technical name - there are at least two ways to accomplish this -

1) sessions: register sessions variables as you go and then put them all in the DB at the end.

2) hidden form fields. Keep passing collected variables along as hidden form fields until you get to the last page, then insert the infomation in the DB.

3) Commit it to the database yourself w/out sessions and just keep track of a unique ID number that you would pass on each form.
